The student will be responsible for planning a progression of experiments related to project objectives, and will carry out the experiments upon supervisor approval. The successful candidate will be receiving all lab safety related trainings, and carrying out research activities related to the project. Specifically, duties undertaken by the student will include: extraction of bioactives from mustard seed/bran samples or commercial products; sample clean up using partitioning, SPE; analyses of glucosinolate and phenolic contents using HPLC, spectrophotometers; assessing antioxidant and anti-inflammatory activities, and enzyme activities, using spectrophotometers, cell culture, commercial kits or flow cytometer. Data collection, analysis and presentation; report and/or manuscript preparation.
The student will work in labs located at the Guelph Research and Development Centre – Agriculture and Agri-Food Canada (Guelph, ON).

Currently enrolled or will be enrolled by the date of appointment in a Master’s program in a recognized post-secondary institution in the Food Science Program or related area.
Note: Must be currently recognized as having full-time student status in the academic institution in which they are presently enrolled, pending approval of acceptance, or in the process of submitting their application. Proof of enrollment will be required prior to start date and the student must be returning to full-time studies for their next academic term. The student must meet the enrollment requirements of graduate studies at the University of Guelph.
